To make this amazing Carrot Cake you just need some ingredients and... your Thermomix TM5!
This recipe is normally made for Thermomix TM31, but there is no problem! If you want more information about differences between TM31 et TM5, take a look at our previous article.
INGREDIENTS
For the cake you need:
- 250 grams walnuts
- 400 grams carrots, washed and roughly chopped
- 2 eggs
- 220 grams raw sugar
- 160 grams EVOO (olive oil)
- 1 tsp vanilla essence
- 1/2 tsp mixed spice
- 1/4 tsp salt
- 200 grams plain flour
- 1 tsp bicarb soda
For the icing you need:
- 220 grams raw sugar, milled 10 sec, sp.10 to icing sugar
- 90 grams cream cheese
- 45 grams Butter, at room temperature
- 1/2 tsp lemon juice
PREPARATION:
First, prepare your oven at 185°C.
Introduce walnuts into the mixing bowl and mill 4 seconds/ Speed 9. Keep it for later
Introduce then the carrots and chop 4 seconds/ Speed 5. Keep it for later
Place eggs, sugar and oil and mix 5 seconds/ Speed 5
Then add salt, spice, vanilla, flour and bicarb and mix 10 seconds/ Speed 5
You can now add the walnuts and carrots and mix on reverse 15 seconds/ Speed 2
Now you just have to bake for 75 minutes... And be surprised by this amazing cake!
